Smoked Trout Recipe

Ingredients:

1 Gallon of Cold Water

1 Package of Gourmet Fish Brine

Trout Fillets

Tools needed:

Large Plastic Mixing or Brining Bowl

1 Gallon of Cold Water

Instructions:

  1. Prepare the Brine
Mix 1 packet of Hi Mountain Gourmet Fish Brine with 1 gallon of cold water in a large mixing bowl. To make mixing easier, use the sprayer from your sink if available. If not, use a whisk or large wooden spoon to ensure the brine is fully combined.
  2. Brine the Fillets
Add your cleaned fish fillets to the brine, ensuring all pieces are fully submerged. Mix gently to ensure the brine evenly contacts all the fillets. Cover the bowl and refrigerate for 24 hours.
  3. Rinse and Dry
After 24 hours, remove the fillets from the fridge and rinse them thoroughly under fresh, cold water to remove the brine. Place the fillets on paper towels, pat them dry, and leave them at room temperature for about 2 hours. Once the fillets feel slightly sticky to the touch, they’re ready to smoke.
Optional: Sprinkle garlic powder and black pepper on the fillets before smoking if you like additional seasoning.
  4. Prepare the Smoker
Oil the racks of your smoker with your preferred cooking oil to prevent sticking. Place the fillets skin-side down on the racks. Use apple or alder wood to smoke the fish.
  5. Smoke the Fish
Smoke the fillets until they reach an internal temperature of 180°F. Once done, remove them from the smoker and allow them to cool completely.
  6. Remove Pin Bones
After the fillets have cooled, use a pin bone puller or your fingers to remove any pin bones.
